Bring the brown rice and water to a boil in a saucepan over high heat. Reduce the heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes remove from heat and allow to cool, fluffing occasionally with a fork.
Toss the avocado and lemon juice together in a large bowl. Add the tomatoes, cucumber, onion, feta, olives, mint, olive oil, lemon zest, garlic, salt, and pepper to the bowl lightly toss the mixture until evenly combined. Fold the cooled rice gently into the mixture. Serve immediately or chill up to 1 hour the salad does not last well for more than a day as the tomato and cucumber begin to release their juices and the salad becomes watery.

- ½ cup chopped onion
- 2 large stalks celery, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 (28 ounce) can canned peeled and diced tomatoes
- 1 (6 ounce) can tomato paste
- 2 (7 ounce) cans whole baby clams, undrained
- 4 bay leaves
- ½ teaspoon chili pepper flakes

In a large saucepan, saute the onion, celery, and garlic in 2 tablespoons olive oil until tender. Stir in tomatoes, tomato paste, and clams. Season with bay leaves, chili pepper flakes, oregano, and salt and pepper to taste. Cover, and simmer for 1 hour, until tomatoes begin to turn deep red in colour and the sauce thickens. Stir in remaining 2 tablespoons olive oil near the end of the cooking time.

- ½ pound fresh mushrooms, sliced

Preheat oven to 250 degrees F (120 degrees C). Wrap the tortillas in aluminum foil, and warm in the oven about 10 minutes, until soft.
Heat the olive oil in a saucepan over medium heat, and saute the garlic, shallots, and mushrooms 5 minutes, until lightly browned. Pour in the wine, and scrape up any browned bits from the bottom of the saucepan. Mix in the lentils, and cook 2 minutes, just until heated through.
Fill each tortilla with a portion of the lentil mixture, and fold or roll. Top with feta cheese, olives, and tomatoes.

Salad Nicoise
A classic French summer salad, that is made with tomatoes, hard-boiled eggs, olives, and anchovies or tuna, dressed with and lemon vinaigrette to add a bright, briny flavor.
Ingredients
- 4-6 anchovy fillets
- 1lb fresh salmon or tuna filet, pan-seared
- 1/2 pound Mona Lisa potatoes, cooked + quartered
- ½ cup sliced black olives
- 4 cups of mâche or 1 head of butter lettuce
- 2 tbsps olive oil
For Dressing:
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- ¼ cup fresh lemon juice
- 2 tbsp freshly chopped parsley
- 2 garlic cloves, minced
- Salt and pepper
Method
- In a small bowl, whisk together ingredients for the dressing, chill until serving.
- In a large pan, heat olive oil over medium heat. Add salmon/tuna filet and cook for 3-4 minutes on each side.
- On a large serving plate, place lettuce leaves and top with onion, tomatoes, potatoes, radishes, olives, salmon/tuna, and anchovies.
- Drizzle dressing and sprinkle with salt and pepper.
Combine Pasta and Baked Feta
Once timer goes off, remove tomatoes and cheese from oven. You will notice that the tomatoes are cooked and fragrant, if basil was added there will be bits of black basil (try one, salty!).
At this point you really could stop and enjoy this tomato feta pasta without the pasta as just a dip…. scoop onto crustini…mmmmmmmmm. But for another time.
Toss in chopped garlic and about another 1/4th to 1/3rd chopped fresh basil leaves.
Stir in about half of the made pasta to start, making sure tomatoes and cheese get mixed in.
Once the pasta is incorporated, add the rest of the pasta and stir.
Optionally a bit more cracked pepper on top.
