Bake This Award Winning Strawberry Cake!

Preheat oven to 350 degrees. Grease two 8-inch round cake pans and line with parchment paper on the bottom.

Mix the storebought cake mix and Jell-O in a large mixing bowl. You could also use a stand mixer if preferred.

Add the eggs, oil, and water, and mix using a hand mixer or stand mixer until smooth, about one minute. Fold in the fresh strawberries using a spoon.

Transfer the cake batter to both of the cake pans and spread evenly. Bake for 25-30 minutes until a toothpick inserted into middle of cakes comes out clean. Let cool.

For the frosting:

Add all frosting ingredients to a mixing bowl. Beat using a hand mixer, about 30 seconds to 1 minute. If frosting isn't thick enough to liking, add 1/2 to 1 cup of additional powdered sugar as desired.

Frost the first layer of cake, and then stack the 2nd layer on top, frosting cake completely. Decorate the top with fresh strawberries if desired. Enjoy!

Simply Delicious Strawberry Cake

Preheat oven to 350 °F. Lightly grease 2 (9-inch) round cake pans.

In a large bowl, combine cake mix and gelatin. Add pureed (15 oz) strawberries, eggs, oil, and water beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.

In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioner’s sugar, beating until smooth.

Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

Strawberry Cake Batter

The cake batter starts from my white cake. This vanilla flavored cake proved to be the best jumping off point for a strawberry cake. I kept the majority of the recipe the same, but I removed some of the wet ingredients to make room for 1/2 cup of reduced strawberries. The cake is light, springy, soft, and fluffy.

The reduced strawberry puree will tint the cake batter a lovely pastel pink and, if you want, you can add a small drop of pink or red food coloring to brighten that hue. Not necessary, of course. (I added a teeny drop.) Expect a velvet-y and slightly thick cake batter.

4. Strawberry Ice Cream

You need not worry about tempering eggs to have delicious and creamy homemade ice cream. This recipe has just six ingredients and is easy enough to make with kids.

Blitzed, sweetened strawberries are the base for this sweet and simple dessert.

Combine puréed strawberries with heavy cream, milk, vanilla, and a little salt, before adding the mixture into an ice cream maker.

In just 30 minutes, you&rsquoll have a soft and perfectly pale pink sweet treat.
