- 170g prawns - peeled, veined and cut into 2cm pieces
- 1 pinch salt and ground black pepper to taste
- 1 teaspoon cornflour
- 1 tablespoon vegetable oil, or more as needed
- 1 teaspoon minced garlic
- 1 egg, beaten
- 100g diced button mushrooms
- 120g frozen mixed vegetables
- 1 apple - peeled, cored, and diced
- 2 tablespoons raisins
- 1 teaspoon curry powder
- 1 tablespoon light soy sauce
- 300g cooked white rice
- 1 spring onion, finely chopped

- Mix prawns, salt and pepper together in a bowl; stir in cornflour.
- Heat oil in a wok over medium heat; add prawn mixture. Cook until light brown, about 5 minutes. Transfer to a plate.
- Stir garlic into the wok; cook until fragrant, about 1 minute. Add egg; cook and stir until scrambled, about 3 minutes. Mix in mushrooms; cook and stir until softened, about 5 minutes.
- Stir mixed vegetables into the wok; cook until softened, 3 to 5 minutes. Mix in apple and raisins; add curry powder. Cook and stir until fragrant, about 3 minutes.
- Mix rice into the wok; season with soy sauce, salt and pepper. Cook and stir until rice is heated through, 3 to 5 minutes. Add prawns and chopped spring onions; cook and stir until warmed through, 2 to 4 minutes.

10.13.16 Had my doubts about the apple in fried rice, but was I ever pleasantly surprised. First, I think I had the best Gala apple ever (seriously crisp and sweet), but what that apple brings to this recipe is really unique, the perfect complement to the shrimp and curry I might add. Prawn Biryani
This Biryani recipe is like many other Biryani recipes in that fluffy Rice and a rich curry is layered along with other bits such as vegetables in one large pot over low heat. In this recipe, we stick to the prawns only.
In terms of Biryani, there are so many varieties and versions out there. We have
and some versions where both the main elements are served separately.
What is Biryani
Biryani is a layered dish where each layer is slow cooked with herbs and spices and then the layers are combined and layered together where the curry bubbles away with the rice and all the flavours come together in perfect harmony.
In this version, because the protein is prawns, the curry element differs slightly so that we don’t end up with tough chewy prawns.
I am sharing my mum’s version soon, which is my favourite and also the favourite of many of mine and my siblings friends.

This Burmese prawn curry is the recipe featured in our first ever Cooking with Grandma video. In the video, Alvina Mangrai shows her granddaughter Alyssa how to make the curry that she first learned to make when she was pregnant and living in the United States after moving from Burma. Pat Tanumihardja, author of the blog The Asian Grandmothers Cookbook, transcribed the recipe and shared it with CHOW . She’ll also include it in her book, due out in either late 2009 or early 2010. This curry can be served with Alvina’s coconut rice, also shown in the video.
What to buy: Sambal oelek is a straight-up chile sauce, without garlic or any other flavors added. It is commonly used in Asian cooking and can be found in the Asian section of your market or online.
Ingredients of Prawn Fried Rice
- 2 tablespoon vegetable oil
- 80 gm frozen peas
- 2 tablespoon corn
- 8 spring onions
- 300 gm basmati rice
- 150 gm prawns
- 2 1/2 tablespoon soy sauce
How to make Prawn Fried Rice
Step 1
Place a pan over medium flame and pour oil in it. Once the oil is hot enough add the frozen peas along with chopped spring onions and corns to it and fry till they are tender. Once the peas appear cooked, add the left over rice to it and fry for 5-7 minutes.
Step 2
After a minute, add prawns to the pan and stir fry till they are cooked well. Switch the flame to low and cover the pan with a lid for minimum 10 minutes, keeping in mind to stir in between.
Step 3
Remove the lid and turn off the gas knob. Your prawn fried rice are now ready. Transfer them to a large serving bowl and serve hot.
Thai fried rice (khao pad ข้าวผัด)
Really quickly before we begin with this fried rice recipe, let’s go over a few details.
In Thailand, fried rice along with basil chicken (or other variations), are dishes that nearly every stir fry restaurant serves, especially common at street food stalls.
You can order Thai fried rice with your choice of meat, but one of my personal favorite versions is known in Thai as khao pad goong (ข้าวผัดกุ้ง), or fried rice with shrimp.
The reason I like it so much, because if you peel the shrimp, but leave the head on, so the oily goodness from the head of the shrimp acts like a sauce to coat the rice in red buttery shrimp flavor – it’s amazing (I’ll show you how in this recipe).
That being said, you can make this Thai fried rice recipe with shrimp or any other meat or protein you like.
Some of the ingredients you’ll need for this recipe

To cook rice
Whole spices to cook rice:
- 1 bay leaf (tej patta)
- 2 cloves (laung)
- 1- inch cinnamon (dalchini)
- 10 black pepper corns (kali mirch)
- 1 green cardamom (choti elaichi)
To marinate the prawns
- 2 cups prawns, (cleaned & de-veined), (jhinga) (shrimp)
- salt to taste
- ¼ tsp turmeric powder (haldi powder)
- 1 tbsp ginger garlic paste (adrak lasan ka paste)
- 1 green chili cut into desired size (optional)
- 1 tbsp lemon juice
- ¾ cup curd/yogurt
For saffron milk
For fried onions (birista)
To make prawns masala
Whole spices:
- 1 bay leaf (tej patta)
- 1 tsp caraway seeds (shahi jeera)
- 1 green cardamom slightly crushed, (choti elaichi)
- 1 black cardamom (badi elaichi)
- 1 blade of mace (javitri)
- 1 star anise (chakra phool)
- 10 black pepper corns (kali mirch)
- 2 cloves (laung)
Other ingredients:
- 1 tsp red chili powder (lal mirch powder)
- 1 tsp coriander powder (dhaniya powder)
- ½ tsp biryani masala powder
- 1 green chili optional
For layering the biryani:
- ½ cup chopped coriander leaves (cilantro) (hari dhaniya)
- ¼ cup chopped mint leaves (pudina)
- ½ tsp biryani masala powder
- 2 tsp ghee/clarified butter
- Kewra essence 2-3 drops (optional)
- Rose essence 2-3 drops (optional)

Notes
- Do not overcook the prawns, it may turn hard (chewy or rubbery).
- Always use a heavy bottom utensil/pan to make biryani.
- Use fresh curd/yogurt to make it.
- Avoid using lemon juice if using sour curd.
- If the rice is cooked completely or when you press the rice grains if it is mushy then do not use it for making biryani.
- If you do not have entire list of whole spices then add a few that is available in the kitchen pantry.
- Addition of green chilies is optional. If you prefer less spicy then avoid adding it.
- If you do not have kewra & rose essence then skip adding it. You can make biryani without it.
- When the prawns biryani is cooked, check at the bottom of the pan. If there is any moisture left then place the biryani pot over the tava/ griddle. Cook it on the lowest flame (do not cover with a lid) until all the moisture evaporates. Keep an eye on it otherwise the biryani may burn.

How to Make Prawn fried rice with step by step instructions
Step 1: Cooking the prawns
To start with the recipe, cook the prawns separately. In a frying pan, add oil and coat with evenly. Next, place all the prawns and cook them on both sides. Cook till the prawns turn pinkish-red and curl-up. Once done remove the prawns from the pan and place it on a separate plate. Prawns are ready.
Step 2: Making the fried rice mixture:
Next step is to cook the mixture for the prawn fried rice. To begin with, take a sauce pan or a kadai and add some oil. Once the oil heats up add the chopped garlic and green chilli and saute them in oil.
Now add all the vegetables and mix them well. Make sure the vegetables are crispy and well coated. Next, add the things which add flavor to the dish. LIke, soy, vinegar, black pepper powder and salt.
Mix them all together and saute for a few seconds.
Step 3: Adding the main Ingredient
Finally, add the cooked prawns and rice to the mixture and mix them well. After mixing them, saute it well for a few seconds. The rice and the prawns have to be well coated.
After a few seconds of sauting, prawn fried rice is ready. Garnish it with spring onions or coriander leaves.
