  • 32 Ounces pineapple, diced
  • 4 chipotle chili puree
  • 4 Ounces grade A dark maple syrup
  • 1 Ounce cilantro, chopped
  • 8 red onion, minced
  • 8 red bell pepper, minced
  • Kosher salt, as needed

Don’t get me wrong, I could do some damage with a bowl of this salsa and a bag of Siete chips. But it’s also delicious on grilled chicken, fish or shrimp and pork. I’ve even served it with my flank steak tacos.

What I love most about this salsa is that it’s so fresh, sweet with a little spicy kick from the jalapeños.

To Make This Pineapple Salsa Recipe You Will Need:

  • fresh pineapple
  • red onion
  • jalapeño
  • cilantro
  • fine salt
  • lime juice

In a bowl, add 1 pound fresh pineapple that is diced into small cubes. Then add in 1/2 cup finely chopped red onion, 1 (large) jalapeño (seeded for less heat) diced small. Lastly add in 1/4 cup chopped cilantro.

Add in a pinch of fine salt.

And squeeze in the juice of 1/2 a lime.

I prefer to make this and serve immediately. The texture can change a bit if you make it too far in advance.
